Small Marble Cake
When I had to name one cake that reminded me of my childhood, it would be a marble cake.
It was fun making it with my mum and later on my own.
I loved mixing the two batters, however, I always favoured the chocolate one.
If you want it a little fancier, you can also bake it in a small bundt tin.
Happy Baking!
Ingredients
For the cake
100g softened butter
100g sugar
2 eggs
150g flour
1 tsp baking powder
75ml milk
15g cacao powder
Vanilla essence
Salt
Method
Preheat the oven to 170°C (fan) and grease a small cake tin.
In a bowl - beat the butter, sugar and vanilla essence (to taste) until light and airy.
Add in one egg at a time and whisk until you get a smooth batter.
Sift in the flour, baking powder and a pinch of salt.
Add 50 ml of milk and mix until combined.
Divide the batter into two.
Add the cocoa powder and 25 ml of milk to one half of the batter and mix until well combined.
Pour the light batter into the tin first and spread the chocolate batter on top. Swirl through the batter with a fork.
Bake for 30 minutes or until a skewer inserted into the cake comes out clean.
Transfer to a wire rack to cool.
